Banana Pancakes

Want something special for breakfast without any fuss? This recipe only requires three ingredients: Banana, Eggs, and a little baking powder. They're delicious by themselves, or with tasty toppings such as berries, honey, or a little extra banana. What's even better is they have no added sugar, no flour, no salt, and no dairy.


Ingredients

  • 1 large ripe banana
  • 2 eggs
  • 1/8 tsp baking powder
  • Pinch of cinnamon (optional)
  • Butter, olive oil or cooking spray, to cook

To serve (all optional):

  • Chopped nuts
  • Honey/Maple syrup
  • Natural yoghurt
  • Fresh berries
  • Chopped banana

Method

  1. Mash the banana with the back of a fork. Whisk in the eggs, baking powder and cinnamon (if using) until well combined.
  2. Heat a pan over a medium-high heat and add the butter, oil or a coating of cooking spray.
  3. Spoon the batter into the hot pan and cook for 2-3 minutes. When bubbles form in the centre of the pancake, flip over and cook for another 2-3 minutes.
  4. Serve the banana pancakes warm with any desired toppings.
