Chocolate Chip Brownie Cake

This brownie cake is bound to be a hit with anyone who tries it, whether served warm with vanilla ice cream, or cut into squares. The only challenge is not eating it all at once! To make it a Blondie instead of a Brownie, just leave out the cocoa powder, and use white chocolate chips.
Ingredients
- 115g butter
- 200g sugar
- 6½ tbsp cocoa powder
- 1 large egg, beaten
- 1 tbsp vanilla extract
- 125g all-purpose flour
- ¼ tsp salt
- ¼ tsp baking powder
- 150g chocolate chips
Method
- Preheat the oven to 180˚C/160˚C fan/gas mark 4.
- Melt the butter in an oven-proof pan over a medium-low heat. Using a wooden spoon, stir in the sugar and cocoa until the sugar has dissolved.
- Remove from the heat and stir in the vanilla extract and salt. Using a Mixer or spoon, quickly stir in the egg; then add the flour and baking powder and mix until combined. Add the chocolate chips and stir.
- Pour into a cake tin or high-sided baking tray, and bake for 16-18 minutes, until the edges are set like a cookie but the centre is still a little wobbly to the touch. If you're serving as a brownie rather than a dessert, you may want it slightly firmer.
- Allow to sit for 5-7 minutes, then cut into portions and serve with vanilla ice cream.
