Tomato & Herb Spaghetti

Whatever did we do before the influx of Italian flavours into our meals? This delicious Tomato & Herb Spaghetti recipes is ridiculousy easy to make, but tastes great - it's also easy to adapt if you fancy using different pasta shapes, or more vegetables.


Ingredients

  • 300g spaghetti
  • 60ml olive oil
  • 2 tbsp tomato purée
  • 2 cloves garlic, crushed
  • 1 tsp salt
  • 2tbsp fresh basil, chopped
  • 2tbsp fresh parsley, chopped
  • Grated Parmesan (optional)
  • Freshly ground black pepper (optional)

Method

  1. Bring a saucepan of water to the boil and cook the spaghetti according to the package instructions.
  2. Heat the olive oil in a large frying pan, and gently fry the tomato purée, crushed garlic cloves, and salt for five minutes.
  3. Add the drained spaghetti and toss with the chopped parsley and basil.
  4. Serve with a sprinkling of grated Parmesan, and black pepper.
